We installed these years before we had the distillery up and running, because we were growing grain throughout the funding process and renovation. The bins line up along the eastern edge of the barn, and we installed a flex auger underneath the bins which move the grain to the grist house. Another flex auger moves the milled grist from the grist house to the grist case in the distillery. And another flex auger moves the grist into the mash tun when we cook the mash. In order to store wheat and rye over the winter and for long-term storage, we need the moisture of the kernels to be at 12% or lower. And this is a problem with increasingly wetter Julys. Historically, the Hudson Valley was a breadbasket for the colonial states, supplying wheat to New York City and exporting to the Caribbean. Soil nutrient depletion in the region and the opening of the Erie Canal in 1825 led to the collapse of the regional small grain economy in the 1830s-1850s. The Erie Canal drastically lowered the transportation costs of Midwestern grain to the East Coast, and the less rocky soils in the Midwest made farming far easier than in the Hudson Valley. After the collapse of the wheat economy in the valley, the region pivoted to dairy farming. The barn is an old post and beam construction from the mid-1800s, and we wanted to maintain its look throughout the renovation. To maintain the rafter look from inside, we put Structural Insulated Panels (SIP) on top of the purlins. This gave us the insulation we needed with the look we desired. The barn was sitting on dry-laid rock- mostly shale- which is the bedrock in our part of the Hudson Valley. The original floor was dirt but poured concrete had been added to certain parts over the years. The eastern part of the barn, now the distillery, was built with stanchions for milking cows. Once the floor system was completed, every other post was braced and then dug out and cut to about 2 feet above grade. Pier forms were constructed under each post that contained rebar and concrete was poured into each form and the posts were reattached to the concrete. This also served as an eviction notice to the thriving nest of black rat snakes who had taken residence in the barn for generations. And, on a snowy December 5th 2019, we poured 85 tons of concrete for the slab and haunch, in a monolithic pour that connected the footers and piers which were poured earlier. The distilleries were designed with a port at the bottom whereby we can flush the spent mash out of the pots and into this tank via a chemical pipe. Normal PVC would not work, as the spent mash is coming out at over 100° Celsius. We pump the spent mash out of this tank and spread it on the fields after we harvest rye and wheat. We added skylights and doubled the number of windows for maximum natural light inside. The floors in the barrel room and tasting room are also unfinished pine. We repurposed beams from the dairy into the roofing system to add structural integrity with these collar ties and posts up to the ridge beam. For all new lumber that we had to use, we purchased rough-sawn hemlock from a local mill in Ghent, NY. Bourbon Pecan Pie ~Crust: 1 cup of flour 1 stick (8 tablespoons) of butter cut into pieces 1/3 cup very cold water with a teaspoon each of salt and sugar dissolved in it. Work the butter into the flour, knead it, don’t overheat it. Roll into a ball, wrap in cellophane and refrigerate for at least 30 minutes. Roll it out and put it in your pie pan when you’re ready to bake. ~Filling: 1 jar (16oz) of dark corn syrup 1/3 cup sugar 1 teaspoon salt 2 teaspoons flour 3 duck eggs 1 1/2 teaspoons vanilla extract mix together in a bowl, add 2 tablespoons Bourbon (or Branchwater Wheat or Rye Whiskey), 1 1/2 tablespoons melted butter. Mix together. Heat over low heat until aromas come out, about 5-10 minutes. Put in mortar and pestle or coffee grinder and coarsely grind. ~Pat the duck dry. (if using a Pekin or fatter duck, you need to prick the skin all over, without penetrating the meat. For Muscovy, which is leaner, do not prick the skin.) ~Salt the cavity of the duck. ~Rub the skin all over with olive oil. Season with salt and pepper and dried spice blend. ~Put duck on a rack in roasting pan. Place in preheated oven at 400˚ for 30 minutes, then, depending on weight, roast for 45min-1hr 15min at 350˚ until skin is crispy and internal temperature is to your liking. ~Let duck rest 10 minutes. We like to carve the breasts off to eat with a crunchy salad and roasted veggies and we keep the leg meat as leftovers for salads, rice dishes, etc. Please use that carcass to make a rich, warming duck stock which is great this time of year. She loved spending time with her grandfather on the tractor, chasing farm animals, and making art out of cow patties with feathers and pebbles. Robin always loved the wild and was a little wild herself. After graduating from the University of Virginia with a major in art history, her restless soul led her to Oregon and then Italy before setting her sights on the bright lights of New York City. There, Robin put her art history degree to good use at a wine import company, where she became friends with her future husband, Kevin. Her career in wine pulled together so many of her interests: people, culture, travel, and agriculture, and it truly opened her eyes to the risks people take to farm as a way of life. When she and Kevin first laid eyes on what would become Branchwater Farms in the fall of 2013, Robin knew she had finally found her home. It was here that he fell in love with sweeping landscapes, learned to drive his grandfather’s truck – a cherry red 1955 International that now resides at Branchwater – and fix a motor. After graduating from Swarthmore College with a degree in English literature and dreams of writing the great American novel, Kevin returned to Columbus and landed a part-time job at a wine shop to support his ambitions. Eventually, Kevin moved to New York to oversee national sales and marketing for a large wine importer. After 13 years, Kevin left that position to start Schatzi Wines, importing the wines of small, family-run wineries in Europe along with a winery in the Finger Lakes and a Hudson Valley cidery. But Kevin was eager to grow and make something himself. The Hudson Valley has a deep tradition of producing cider and spirits and the climate to support the cultivation of quality grains, apples, and pears. When he found Branchwater Farms, a long-held vision began to come more clearly into focus.
